Simple Memorial Day BBQ Food Ideas

Memorial Day signifies the beginning of summer, the beginning of camping trips and barbecues. People have their favorite Memorial Day menu that starts off the season for them, but this year think about trying a new recipe or a marinade. Also remember to oil the cooking grate before cooking so the meat won't stick. - Espresso-rubbed barbecued burgers use 1 tsp. instant coffee powder or espresso powder, 1/2 tsp. ground black pepper, 1 pound ground beef formed into 4 patties, 2 tbsp. hickory brown sugar flavored barbecue sauce and four slices of Colby-Jack cheese. Combine coffee powder and pepper and sprinkle over both sides of burger patties. Cook patties 4 to 5 minutes per side on medium-hot grill, then brush with barbecue sauce and place a slice of cheese on each. Grill until cheese melts. Lightly toast burger buns on grill. - Marinated chicken breasts use 2 tbsp. lemon juice, 2 tsp. Worcestershire sauce, 1/4 tsp. black pepper, 1/2 tsp. tarragon, 1/4 cup spicy mustard and 4 boneless skinless chicken breasts. Combine everything but the chicken and mix well. Thoroughly coat chicken in marinade and place in resealable plastic bag and refrigerate for 15 minutes. - Shrimp kabobs use a marinade made of 1/4 cup olive oil, 1 tbsp. minced parsley, 1/2 tbsp. lemon pepper seasoning and 4 cloves minced garlic. Thaw and dry 2 pounds of raw shrimp, about 20 shrimp to a pound. Rub shrimp thoroughly with marinade and refrigerate them for several hours. Skewer shrimp and grill 3 to 4 minutes on each side. - Grilled vegetables become a barbecue favorite by using a marinade. Maple and wasabi marinade uses 2 tbsp. olive oil, 2 tbsp. maple syrup and 1 tsp. wasabi. Brown sugar and bourbon marinade uses 2 tbsp. bourbon, 2 tbsp. soy sauce, 1 tsp. cayenne pepper and 1 tbsp. brown sugar. Spicy orange and cilantro uses 1 tbsp. orange juice, 1 tbsp. orange marmalade, 2 tbsp. olive oil, 1 tbsp. chopped fresh cilantro and 1 tsp. red pepper flakes. For any of these marinades, mix the ingredients in a shallow dish and let vegetables soak for 30 minutes to 1 hour before grilling.
